Easy spinach lentil soup instant pot recipe for new mothers and families

Spinach and lentil soup is super delicious and healthy food which is rich in protein, fat, carbohydrates, fiber and vitamins. It is easy to prepare in instant pot and is a wholesome meal which can be eaten with rice or bread.
It is a perfect food for new moms and family as it can be prepared with minimum supervision.
OVERVIEW

  • Cooking time 25 min (almost all is hands off)
  • Cleaning time 5 min

INGREDIENTS
  • 2 cups yellow or green lentils or any other readily available lentil
  • 4 cup chopped spinach fresh or 2 cups frozen spinach
  • 1 chopped tomato or ½ cup tomato puree
  • ½ teaspoon Turmeric powder
  • ½ teaspoon Paprika powder
  • 3 teaspoon ghee (clarified butter, available in Indian stores) or olive oil
  • Salt to taste
  • 3 cups water

INSTRUCTIONS FOR INSTANT POT

  1. Wash lentils in a large bowl or pot.
  2. Turn on “Saute” mode on instant pot
  3. Add 3 teaspoon of ghee or olive oil
  4. When ghee is melted, add turmeric, paprika and saute for 30-40 secs
  5. Add tomatoes and a pinch of salt
  6. Saute for 2 min
  7. Add spinach and a pinch of salt
  8. Saute for 2 min
  9. Add lentils
  10. Add 3 cups water and salt to taste
  11. Turn instant pot setting to pressure cooker
  12. Put on and close the lid
  13. Set the pressure cook time for 20 min
  14. After 20 min are done, wait for 10 min for steam to release. Serve hot. It’s best with rice or toasted bread.
  15. Enjoy!

To reheat, add a splash of water and boil it for 5 min.
